With the purpose of provide seafood processors updated knowledge about effective control of infectious elements from water and ice and thereby coming up with solutions, under the sponsorship of EU-MUTRAP, Vietnam Association of Seafood Exporters and Producers (VASEP) organized the training course on “Water and Ice Source Safety Assurance in Seafood Processing Enterprises” in 24 September 2016 in Ho Chi Minh City.
Water and ice are in direct contact with food or with food contact surfaces. Unsafe water and ice is the main source of more direct and dangerous infection than chemical, microbiological and physical hazards to seafood products.
Related to the seafood in Hazard Analysis and Critical Control Points (HACCP), there are two requirements to be complied with for hygiene control under Sanitation Standard Operating Procedures (SSOP), which are safety control of water source and ice source.
At the training, EU-MUTRAP experts shared practical experiences in management and assurance of water and ice safety, in sampling and testing of water source, quality improvement and promptly remedies in case of incidents.
Some water treatment system were presented and recommended to be applied, including: treatment with Chlorine, with ozone and with UV.
As evaluated by trainees, the course was practical and useful for effective control of water and ice sources to ensure product quality in light of the current situation of seafood enterprises.
With the support of EU-MUTRAP, VASEP will organize further trainings on sanitation of contact surfaces and proper use of chemicals for seafood processors in October 2016.
